Ingredients
For the Coconut Jasmine Rice
Jasmine rice
Coconut milk
Water
Salt
For the Curry Beef Bites
Sirloin steak, cut into bite-sized pieces
Jamaican curry powder
Allspice
Garlic powder
Thyme
Paprika
Salt
Black pepper
Oil
Onion
Garlic
Beef broth
Coconut milk
For the Mango Salsa
Ripe mango
Red onion
Red bell pepper
Lime juice
Fresh cilantro
Salt
Instructions
Rinse the jasmine rice until the water runs mostly clear.
Combine the rice, coconut milk, water, and salt in a pot. Bring to a boil, reduce heat, cover, and cook for about 15 minutes.
Remove the rice from the heat and let it rest, covered, for 10 minutes before fluffing.
Season the beef with Jamaican curry powder, allspice, garlic powder, thyme, paprika, salt, and black pepper.
Heat oil in a skillet and brown the beef.
Add the onion and garlic and cook until fragrant.
Pour in the beef broth and coconut milk and simmer until the sauce reduces and coats the beef.
Mix the mango, red onion, bell pepper, lime juice, cilantro, and salt together for the salsa.
Serve the curry beef over coconut jasmine rice and finish with mango salsa.
